This one, I intentional left the centre part and leaves that fallen off to be colour and rest is desaturated.

Clever piece of work - I understand you can pick certain colours to be dominant. It would take me too long to get a translation as I speak only English, but I am sure Japan says something like Honto! sumimasen, kirei desu yo!

This particular one is using partial editing for desaturated colour from the surrounding. there are lots of thing can be done with computer these days.
